Preheat Oven: Set oven to 400°F (200°C).
Prepare Chicken and Potatoes: Toss halved potatoes with 1 tablespoon olive oil, salt, pepper, and half the Italian seasoning. Place on a baking sheet or oven-safe pan.
Cook Chicken: Heat remaining olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and the rest of the Italian seasoning. Sear chicken 2–3 minutes per side until golden (it will finish cooking in the oven).
Make Garlic Parmesan Cream Sauce: In a small saucepan, sauté minced garlic in a little olive oil for 30 seconds. Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
Combine and Bake: Place seared chicken on the baking sheet with potatoes. Pour cream sauce over chicken and potatoes. Bake for 20–25 minutes, until chicken is cooked through (internal temp 165°F) and potatoes are tender.
Serve: Garnish with fresh parsley and serve hot.
