Prepare the Potatoes
Peel and chop the potatoes into chunks.
Boil in salted water until tender (about 15–20 minutes). Drain and mash until smooth.
Cook the Aromatics
Heat olive oil in a pan.
Sauté the onion until soft and golden, then add garlic and cook for 1 more minute.
Stir in the spinach and cook until wilted. Season lightly with salt and pepper.
Combine the Mixture
In a large bowl, mix mashed potatoes, sautéed spinach mixture, grated Parmesan, and the egg.
Season with additional salt and black pepper to taste.
Bake the Dish
Preheat oven to 375°F (190°C).
Grease a baking dish with olive oil.
Spread the potato-spinach mixture evenly inside.
Sprinkle breadcrumbs on top for a crunchy finish.
Bake for 20–25 minutes, until the top is golden and slightly crispy.
