Prepare the Filling: Heat olive oil in a skillet over medium heat. Add chopped onion and cook until soft and translucent, about 5 minutes. Add minced garlic and sauté for another minute. Season with salt, pepper, and optional Italian herbs.
Mix the Cheese: In a bowl, combine sautéed onions and garlic with ricotta and Parmesan cheese. Mix well.
Stuff the Shells: Spoon the cheese mixture into each cooked shell and arrange them in a baking dish.
Add Sauce and Cheese: Pour marinara sauce over the stuffed shells, then sprinkle shredded mozzarella evenly on top.
Bake: Preheat oven to 375°F (190°C) and bake for 20–25 minutes, until the cheese is melted and bubbly.
