Caramelized Apple Cake with Cream Cheese Frosting and Almonds

In a saucepan, combine apples, sugar, lemon juice, and cornstarch.

Cook over medium heat, stirring occasionally, until apples are soft and caramelized. Set aside to cool.

Prepare the Cake Batter:

Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) cake pan.

Cream butter and sugar together until fluffy.

Add eggs one at a time, beating well after each addition.

Sift together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with milk.

Stir in vanilla extract.

Bake the Cake:

Fold caramelized apples gently into the batter.

Pour into the prepared pan and smooth the top.

Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

Allow cake to cool completely in the pan.

Prepare the Frosting:

Beat cream cheese and butter until smooth.

Gradually add powdered sugar and vanilla extract. Mix until creamy.

Assemble the Cake:

Spread cream cheese frosting evenly over the cooled cake.

Sprinkle toasted almonds on top for added crunch and flavor.
