Brunch Salad with Bacon & Egg

1. Cook the Bacon

In a small skillet over medium heat, cook the bacon until crispy. Remove and drain on a paper towel, leaving about 1 teaspoon of bacon fat in the skillet.

2. Fry the Egg

Crack the egg into the same skillet with the bacon fat (or a little olive oil). Fry to your preferred doneness, ideally keeping the yolk runny. Season with paprika, salt, and pepper.

3. Assemble the Salad

In a large bowl, combine mixed greens and cherry tomatoes. If using, whisk together dressing ingredients and toss the greens lightly.

4. Plate and Serve

Transfer the salad to a serving plate. Crumble or chop the crispy bacon over the greens, add soft cheese cubes, and gently place the fried egg on top. Serve immediately.
