Beet & Burrata Salad with Pine Nuts

Roast Beets: Preheat oven to 400°F (200°C). Roast beets for 40–45 minutes until tender. Allow to cool, then peel and slice.

Arrange Greens: Place mixed salad greens on a serving plate. Top with roasted beet slices.

Add Burrata: Place burrata cheese in the center of the salad.

Add Pine Nuts: Sprinkle toasted pine nuts over the salad for crunch and flavor.

Dress Salad: Drizzle with olive oil and balsamic vinegar.

Season & Serve: Season with salt and pepper to taste. Serve immediately.
