Baked Potato and Vegetable Casserole – Comfort in Every Bite

1. Prepare the Vegetables 🥦

Preheat oven to 375°F (190°C).

Boil diced potatoes in salted water for 8–10 minutes until slightly tender. Drain and set aside.

Steam or blanch broccoli and carrots for 3–4 minutes.

In a bowl, combine sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper. Stir until smooth.

3. Assemble the Casserole 🍲

In a greased 9×13-inch baking dish, layer potatoes, broccoli, carrots, bell peppers, and onion.
