Layer for Baking: Spread the vegetables in a single layer on a greased baking sheet or in a casserole dish.
Bake: Bake for 20–25 minutes until the vegetables are tender and lightly browned.
Add Mozzarella: Sprinkle shredded mozzarella evenly over the vegetables and return to the oven for an additional 5–7 minutes until the cheese is melted and bubbly.
Serve: Remove from the oven and let cool for 2–3 minutes. Serve warm as a main dish or a side.
