In a bowl, mix oats, baking powder, cinnamon, and a pinch of salt.
Add eggs, milk, and vanilla extract (if using), stirring until smooth.
Fold in the grated or chopped apple.
Cook the Pancakes:
Heat a non-stick skillet over medium heat and add a little butter or oil.
Pour small portions of batter onto the skillet.
Cook for 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden.
Serve:
Stack the pancakes on a plate and add your favorite toppings. Enjoy immediately!
