Zucchini Roll with Ham and Cheese

Wash and thinly slice the zucchini lengthwise using a mandoline or sharp knife.

Lightly salt the slices and set aside for 5–10 minutes to release excess water. Pat dry.

2. Make the Egg Mixture

In a bowl, beat the eggs with Parmesan cheese and a pinch of salt.

3. Cook the Zucchini Base

Heat olive oil in a non-stick skillet over medium heat.

Lightly cook the zucchini slices until just tender but not mushy. Remove and let cool.

4. Assemble the Roll

Spread a thin layer of cream cheese over each zucchini slice.

Add a slice of ham on top of the cream cheese.

Carefully roll the zucchini slice around the filling.

5. Bake (Optional)

Preheat oven to 350°F (175°C).

Place zucchini rolls seam-side down on a baking sheet. Bake for 10–12 minutes until warmed through.

6. Garnish & Serve

Sprinkle with chopped fresh parsley before serving.

Enjoy warm or at room temperature.
