Tender Southern Smothered Pork Chops

Season pork chops generously with salt, pepper, and smoked paprika.

Heat olive oil or butter in a large skillet over medium-high heat.

Sear the pork chops on both sides until golden brown (about 3–4 minutes per side). Remove and set aside.

Step 2 – Make the Gravy

In the same skillet, add sliced onions and cook until softened, about 5 minutes.

Add minced garlic and cook for 30 seconds until fragrant.

Sprinkle in flour and stir to form a roux, cooking for 1–2 minutes to remove the raw flour taste.

Gradually whisk in chicken broth, scraping the bottom of the pan to release any browned bits.

Simmer until the gravy thickens, about 5–7 minutes. Season with salt and pepper to taste.

Step 3 – Smother the Pork Chops

Return the seared pork chops to the skillet, nestling them in the gravy.

Cover and reduce heat to low. Simmer for 15–20 minutes, or until the pork chops are tender and fully cooked.

Step 4 – Serve

Spoon the rich gravy over the pork chops and garnish with fresh parsley if desired.

Serve alongside mashed potatoes, rice, or your favorite Southern sides.
