Return the roast to the pot.
Add carrots and potatoes around the meat.
Seal the lid, set the Instant Pot to high pressure for 60 minutes.
Natural Release
Allow pressure to release naturally for 10–15 minutes, then quick release any remaining pressure.
Serve
Slice the pot roast and serve with the tender vegetables. Spoon some of the flavorful cooking liquid over the top.
Tips & Variations
For extra flavor, add a splash of red wine to the broth before cooking.
Garnish with fresh parsley before serving.
