1 whole white fish (sea bass, snapper, or tilapia), 600–800 g, cleaned and scaled
3–4 slices fresh ginger (for cavity)

3 tbsp light soy sauce
2 tbsp Shaoxing wine (or dry sherry)
1 tbsp sesame oil
1 tsp sugar
3 tbsp water
