Slow Cooker Lentil Nacho Dip

1. Prep the Ingredients

Rinse the lentils under cold water and drain. Chop the onion and mince the garlic.

2. Combine in Slow Cooker

In your slow cooker, add the lentils, diced tomatoes with their juices, chopped green chilies, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Pour in the vegetable broth and stir to combine.

3. Cook

Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the lentils are tender and the mixture has thickened.
