Pat scallops dry with paper towels—this ensures a golden, crispy sear.

Season both sides with salt and pepper.

Heat olive oil and butter in a large skillet over medium-high heat.

Once hot and the butter foams, place scallops in a single layer. Avoid overcrowding.

Sear 2–3 minutes per side until golden brown and just cooked through. Remove scallops and set aside.

3️⃣ Make the Lime Cilantro Sauce:

Reduce heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.

Stir in lime juice and zest, scraping up browned bits from the skillet. Simmer 1–2 minutes.
