Simple 3-Ingredient Sponge Cake

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line an 8-inch (20 cm) cake pan with parchment paper.

Whisk Eggs & Sugar: In a large bowl, beat the eggs and sugar together using a hand mixer or stand mixer on high speed for 8–10 minutes, until the mixture is pale, thick, and fluffy.

Fold in Flour: Sift the flour over the egg mixture and gently fold it in using a spatula. Be careful not to deflate the batter.

Bake: Pour the batter into the prepared pan. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
