Savory Mushroom and Potato Skillet

Cook the Potatoes: Heat olive oil or butter in a large skillet over medium heat. Add diced potatoes and cook for 12–15 minutes, stirring occasionally, until golden and tender.

Sauté the Aromatics: Add onions and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds until fragrant.

Add the Mushrooms: Stir in the sliced mushrooms and cook for 6–8 minutes, until they release their moisture and become golden brown.

Season and Finish: Sprinkle in thyme (or rosemary), smoked paprika (if using), salt, and pepper. Toss everything together until well combined.
