Savory Meatloaf with Caramelized Onion Gravy

Preheat oven to 350°F (175°C).

In a large bowl, combine ground beef, breadcrumbs, chopped onion, garlic, egg, milk, salt, pepper, Worcestershire sauce, and paprika. Mix gently until just combined.

Shape the mixture into a loaf and place it in a greased baking dish.

2. Bake the Meatloaf:

Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C). Remove from oven and let rest while preparing the gravy.

3. Make the Caramelized Onion Gravy:

In a skillet, heat butter and olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 15–20 minutes).

Sprinkle flour over onions and stir for 1–2 minutes to form a roux.

Gradually whisk in beef broth and Worcestershire sauce. Simmer for 5–10 minutes until thickened. Season with salt and pepper to taste.

4. Serve:

Slice the meatloaf and drizzle generously with caramelized onion gravy. Serve with mashed potatoes, roasted vegetables, or your favorite sides.

Tips:

For extra flavor, add a tablespoon of tomato paste or Dijon mustard to the meatloaf mixture.

Leftovers keep well in the fridge for 2–3 days and reheat beautifully.
