Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Preheat your oven to 375°F (190°C).

In a medium bowl, combine the roasted red pepper, chopped spinach, mozzarella, Parmesan, breadcrumbs, beaten egg, and salt. Mix until well combined.

Lay the chicken breasts flat. Spoon the filling onto the center of each breast, then roll them up, tucking in the edges. Secure with toothpicks if needed.

Place the stuffed chicken seam-side down in a greased baking dish.

Bake for 25–30 minutes, until the chicken is fully cooked and the filling is hot and bubbly.

Allow the chicken to rest for a few minutes, remove the toothpicks, slice, and serve warm.
