Oven-Baked Garlic Herb Chicken with Roasted Baby Potatoes and Green Beans

Preheat your oven to 400°F (200°C).

2. Prepare Chicken:

In a small bowl, mix Italian seasoning, minced garlic, salt, pepper, and 1 tablespoon olive oil.

Rub the mixture all over the chicken thighs.

3. Prepare Vegetables:

In a separate bowl, toss baby potatoes with 1 tablespoon olive oil, salt, pepper, and a pinch of Italian seasoning.

Spread the potatoes on a baking sheet.

4. Roast Chicken and Potatoes:

Place chicken thighs on the same baking sheet or in a large roasting pan alongside the potatoes.

Roast for 25–30 minutes, flipping the potatoes halfway, until the chicken is cooked through (internal temperature 165°F / 74°C) and potatoes are golden.

5. Add Green Beans:

Toss green beans with a small drizzle of olive oil, salt, and pepper.

Add them to the baking sheet in the last 10 minutes of roasting.

6. Serve:

Remove from oven, let rest for a few minutes, and serve hot with the roasted vegetables.
