Place the chopped onion, garlic, and avocado seed into a glass jar with a tight lid.
Pour olive oil into the jar until everything is fully submerged.
In a pot, bring two cups of water to a boil.
Carefully place the sealed jar into the hot water (double-boiler method) and let it heat gently for about 15 minutes.
Remove the jar and allow it to cool naturally.
Strain the oil into a clean jar or bottle, discarding the solids.
Store in a cool, dark place.
