Season the pork belly with salt, black pepper, and Herbes de Provence.
Heat a splash of vegetable oil in a large pan over medium heat. Fry the pork belly on all sides until golden brown.
Add Onions and Peppers
Add the onions and sweet peppers to the pan, lightly frying them with the pork. This builds flavor and softens the vegetables.
Simmer with Beer
Pour 500 ml of light wheat beer over the pork and vegetables.
Cover and simmer on low heat until the pork is tender and melts in your mouth, about 1–1.5 hours.
