Place chopped strawberries in a small saucepan over medium heat.
Cook for 5–7 minutes, stirring occasionally, until the strawberries release their juices and begin to soften.
2. Sweeten the Preserve
Add honey or maple syrup to the pan and stir well.
If using, add lemon juice for brightness and to extend shelf life.
3. Add Chia Seeds
Stir in chia seeds and continue cooking for 2–3 minutes.
The chia seeds will absorb liquid and thicken the mixture as it cools.
4. Cool and Store
Remove from heat and let the preserve cool to room temperature.
Transfer to a clean jar and refrigerate. The preserve will thicken further as it chills.
Store in the refrigerator for up to 1 week.
