Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking dish with foil for easier cleanup.
Season the Pork Loin: Pat pork loin dry with paper towels. Rub all over with olive oil, salt, pepper, paprika, garlic powder, and onion powder.
Make the Honey Garlic Glaze: In a saucepan over medium heat, combine honey, soy sauce, vinegar, garlic, and Dijon mustard. Bring to a simmer for 2–3 minutes. If you want a thicker glaze, stir in the cornstarch slurry and simmer until slightly thickened.
Roast the Pork Loin: Place the pork loin in the prepared dish. Brush generously with the honey garlic glaze. Roast for 45 minutes to 1 hour (depending on size), basting with glaze every 15–20 minutes. Pork is done when internal temperature reaches 145°F (63°C).
Rest and Serve: Remove from the oven, cover loosely with foil, and let rest for 10 minutes before slicing. Serve with extra glaze spooned over the top.
