In a large measuring jug, combine milk and boiling water.
Add 1 tsp sugar and the yeast, stir gently, and leave in a warm place until foamy.
Prepare the Dough:
In a large bowl, combine flour, remaining sugar, and salt.
Cut in the butter until mixture resembles crumbs.
Beat the egg and add it along with the activated yeast mixture. Mix into a smooth dough.
Turn onto a lightly floured surface and knead 5–10 minutes until springy with tiny bubbles forming underneath.
First Rise:
Place dough back in the bowl, cover, and let rise until doubled in size (about 1 hour).
Shape the Doughnuts:
Divide the dough into 4 pieces.
Roll each piece into a rope 1–1.5 inches wide, then cut into 1-inch strips.
Roll each strip into a ball and place on a tray or wire rack.
Cover lightly and let rise while heating oil to 375°F.
