Place watermelon cubes, lemon juice, sweetener, and mint leaves in a blender. Blend until smooth.
Strain (Optional):
For a smoother texture, strain the mixture through a fine mesh sieve into a pitcher.
Add Water & Chill:
Stir in cold water or sparkling water. Taste and adjust sweetness if needed. Chill in the refrigerator for 30 minutes.
Serve:
Pour over ice cubes and garnish with lemon slices and fresh mint sprigs.
