Green Delights: Homemade Zucchini Burgers – The Healthy Alternative to the Classic Burger

Grate the zucchini and carrot.

Squeeze out excess moisture from the zucchini using a clean kitchen towel or paper towels.

Mix the Ingredients:

In a large bowl, combine grated zucchini, carrot, onion, garlic, breadcrumbs, Parmesan (if using), eggs, oregano, salt, and pepper.

Mix until well combined. The mixture should hold together; add more breadcrumbs if too wet.

Form Patties:

Shape the mixture into 4–6 evenly sized patties, depending on desired thickness.

Cook the Burgers:

Heat a skillet over medium heat and add a little olive oil.

Cook patties for 3–4 minutes per side, until golden brown and firm.

Assemble:

Toast burger buns if desired.

Place zucchini patty on the bun and add your favorite toppings. Serve immediately.
