Glazed Chicken Drumettes with Mediterranean Salad

Glazed Chicken Drumettes:

Pre-Cook Chicken (Optional): For extra tenderness, par-boil drumettes for 10–15 minutes or bake at 375°F (190°C) for 15 minutes. Drain and pat dry.

Sear Chicken: Heat 1 tbsp olive oil in a skillet over medium-high heat. Season drumettes with salt and pepper. Sear until browned on all sides, about 5–7 minutes.

Make Glaze: Whisk together soy sauce, honey/maple syrup, rice vinegar, garlic powder, ginger powder, and red pepper flakes in a small bowl.

Glaze Chicken: Pour the glaze over the drumettes in the pan. Reduce heat to medium-low and simmer, turning frequently, until the glaze thickens, about 5–7 minutes.

Mediterranean Salad:

Combine Ingredients: In a large bowl, mix greens, cucumber, cherry tomatoes, red onion, and olives. Add feta if desired.

Make Dressing: Whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

Dress Salad: Pour dressing over salad just before serving and toss gently.

Serving:

Arrange a bed of Mediterranean salad on plates.

Place glazed chicken drumettes on top.

Garnish with a fresh parsley sprig if desired and serve immediately.
