Eggless Date and Walnut Cake

Preheat your oven to 180°C (350°F). Grease and line a loaf pan or cake tin.

Soak Dates:
Place chopped dates in a bowl, pour over the hot coffee, and stir. Let it sit for 5–10 minutes to soften.

Add Baking Soda:
Sprinkle baking soda over the date mixture and stir—it will fizz slightly.

Mix Wet Ingredients:
In a separate bowl, whisk together oil, sugar, and vegan yogurt until smooth.

Combine Ingredients:
Add the soaked dates (with coffee) into the wet mixture. Stir to combine evenly.

Add Nuts (Optional):
Fold in chopped walnuts for added texture and flavor.

Pour & Bake:
Transfer the batter to the prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

Cool:
Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Serving Tips

Dust with powdered sugar or drizzle with vegan chocolate for a special treat.

Pairs beautifully with tea or coffee.
