Peel (optional) and core the apples, then slice into 1/4–1/2 inch rings.
Make the Batter:
In a bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, beat the egg with milk and vanilla.
Gradually mix the wet ingredients into the dry ingredients until smooth.
