In a medium bowl, beat the cream cheese until smooth.
Add sugar, vanilla extract, and egg yolk, and mix until creamy. Set aside.
Make the Cookie Dough:
Preheat oven to 350°F (175°C).
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Beat in eggs and vanilla until combined.
In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.
Stir in chocolate chips.
Assemble the Cookies:
Scoop about 2 tablespoons of cookie dough and flatten slightly in your palm.
Place 1 teaspoon of cheesecake filling in the center.
Fold the cookie dough around the cheesecake, sealing the edges and forming a ball.
Bake the Cookies:
Place cookies 2 inches apart on a parchment-lined baking sheet.
Bake for 12–15 minutes, until the edges are golden but the center is still soft.
Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
