Crispy Parmesan Zucchini Rounds

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

2. Prepare the Coating

In a shallow bowl, combine Parmesan cheese, breadcrumbs (or oats), dried oregano, garlic powder, onion powder, salt, and pepper.

Mix well to evenly distribute the seasonings.

3. Coat the Zucchini

Lightly brush or spray each zucchini slice with olive oil.

Dip each slice into the Parmesan-breadcrumb mixture, pressing gently to adhere the coating.

4. Arrange on Baking Sheet

Place the coated zucchini rounds in a single layer on the prepared baking sheet.

5. Bake

Bake in the preheated oven for 15–20 minutes, or until the zucchini is tender and the coating is golden brown and crispy.

Flip halfway through baking for even crispiness.

6. Serve

Remove from the oven and let cool slightly.

Serve warm, optionally with marinara sauce or your favorite dipping sauce.
