Prep the Pork
Season pork medallions with salt, pepper, and paprika.
Sear the Pork
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear medallions 2–3 minutes per side until golden brown. Remove from the pan and set aside.
Cook the Mushrooms and Garlic
Add remaining 1 tbsp olive oil to the pan. Sauté sliced mushrooms for 3–4 minutes until soft. Add minced garlic and cook for 30 seconds until fragrant.
Cook the Orzo
Add orzo, chicken broth, and heavy cream to the pan. Bring to a gentle simmer, stirring occasionally. Cook until orzo is tender, about 10 minutes.
Add Spinach and Pork
Stir in chopped spinach and return pork medallions to the pan. Cook 2–3 minutes until spinach wilts and pork is heated through.
Finish and Serve
Adjust seasoning with salt and pepper. Optional: sprinkle with grated Parmesan. Serve hot, straight from the pan.
Tips
Use thin medallions for quicker cooking.
For extra flavor, deglaze the pan with a splash of white wine before adding the orzo.
Add a squeeze of lemon juice at the end for brightness.
