In a large oven-safe skillet or casserole dish, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Season lightly with salt and pepper. Add onions and mushrooms, and sauté until softened, about 5 minutes.
2. Stir in Soup & Rice
Mix in the cream of mushroom soup, uncooked rice, and beef broth. Stir until everything is well combined.
3. Bake the Casserole
Preheat oven to 375°F (190°C). Cover the dish tightly with foil and bake for 35–40 minutes, until the rice is tender and has absorbed most of the liquid.
4. Add Cheese (Optional)
Remove foil, sprinkle cheddar cheese on top, and return to the oven for 5 minutes, or until melted and bubbly.
5. Serve
Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.
