In a large mixing bowl, combine chicken, pasta, cream of chicken soup, sour cream, cheese, veggies (if using), and seasonings.
Spread mixture evenly into a greased 9×13-inch casserole dish.
In a small bowl, mix crushed crackers/breadcrumbs with melted butter and sprinkle over the top.
Bake uncovered for 25–30 minutes, until bubbly and golden brown.
Allow to cool slightly before serving.
