Preheat the oven to 350°F (175°C).
Cook the rice according to package directions.
Step 2 – Combine Ingredients:
In a 9×13-inch baking pan, combine the cooked rice and shredded chicken.
Add the cream of chicken soup, cream of mushroom soup, butter, broccoli, and chopped onion.
Stir in 1 cup of the shredded Cheddar cheese.
Step 3 – Bake:
Bake in the preheated oven for 30–35 minutes.
In the last few minutes of baking, sprinkle the remaining 1 cup of cheese on top and allow it to melt.
Step 4 – Serve:
Remove the casserole from the oven and let it sit for 5 minutes.
Serve hot with a fresh dinner salad or breadsticks.
