Prep the Veggies: Finely chop the carrot and onion.
Cook Onion & Carrot: Heat a little olive oil in a skillet over medium heat. Sauté onion for 2–3 minutes until soft, then add carrot and cook another 3–4 minutes.
Mix Egg & Cheese: In a small bowl, beat the egg. Stir in flour, Parmesan, salt, and pepper.
Combine & Cook: Add the cooked veggies to the egg mixture and stir to combine. Pour back into the skillet and cook on medium-low heat until set, about 3–4 minutes per side.
Serve: Cut into small squares or wedges. Serve warm for breakfast.
