Cheese and Mushroom Stuffed Chicken

Preheat Oven: Set oven to 375°F (190°C).

Prepare Filling: In a bowl, mix mushrooms, cream cheese, and mozzarella with a pinch of salt and pepper.

Stuff Chicken: Cut a pocket in each chicken breast. Stuff with the cheese and mushroom mixture, securing with toothpicks if needed.

Sear Chicken: Melt butter in an oven-safe skillet over medium heat. Sear the chicken for about 5 minutes per side, until golden brown. Remove and set aside.

Make Sauce: In the same skillet, sauté garlic for 1 minute. Add chicken broth and Parmesan, stirring until combined. Season with salt and pepper.

Bake: Return the chicken to the skillet. Transfer to the oven and bake for 20–25 minutes, until the chicken is fully cooked (internal temperature of 165°F / 74°C).

Serve: Garnish with fresh thyme and serve hot.
