Cook the Rigatoni
Bring salted water to a boil.
Cook rigatoni until al dente, reserving ½ cup pasta water. Drain and set aside.
Cook the Cajun Beef
In a large skillet, melt butter over medium-high heat.
Add ground beef and cook until browned, about 6–7 minutes.
Season with Cajun seasoning, salt, and pepper.
Stir in garlic and cook 1 minute until fragrant.
Make the Cream Sauce
Lower heat to medium. Pour in heavy cream, stirring to deglaze the pan.
Add shredded cheddar and Parmesan, stirring until melted and smooth.
Sprinkle in red pepper flakes, if using.
Combine Pasta & Beef Sauce
Add cooked rigatoni to the skillet with the Cajun beef sauce.
Toss until pasta is fully coated.
Use reserved pasta water to reach desired creaminess.
Serve & Garnish
Plate the rigatoni hot.
Top with fresh parsley, extra Parmesan, and a pinch of Cajun seasoning for color.
