Banana Peanut Butter French Toast Roll-Ups

Prep the Bread: Trim the crusts off each slice of bread. Flatten each slice with a rolling pin.

Add the Filling: Spread peanut butter evenly over each slice. Place 2-3 banana slices on one end of the bread.

Roll It Up: Roll the bread tightly around the banana slices. Pinch the edges to seal if needed.

Prepare the Egg Mixture: In a shallow bowl, whisk together the egg, milk, vanilla extract, and cinnamon.

Cook the Roll-Ups: Heat a skillet over medium heat and add a little butter or oil. Dip each roll-up into the egg mixture, coating all sides, then place in the skillet. Cook until golden brown on all sides, about 2-3 minutes per side.

Serve: Remove from heat and drizzle with maple syrup or honey if desired. Serve warm.
