Ingredients
For the Rice:
2 cups Basmati rice, rinsed and soaked for 30 mins
4 cups water
2–3 green cardamom pods
2-inch cinnamon stick
2–3 cloves
1/2 tsp salt
For the Vegetable Masala:
2 tbsp ghee or oil
1 large onion, thinly sliced (for birista & base)
1/2 cup cashews
1/2 cup mixed vegetables (potatoes, carrots, beans, peas – diced)
1/2 cup plain yogurt
2 tbsp ginger-garlic paste
2 green chilies, slit
1/2 cup chopped mint leaves
1/2 cup chopped coriander leaves
1 tsp red chili powder
1/2 tsp turmeric powder
1 tbsp Biryani masala powder
Salt to taste
For Layering/Garnish:
Few strands of saffron soaked in 2 tbsp warm milk (optional)
Fried onions (birista – from sliced onion above)
Fried cashews (from cashews above)
Fresh mint sprigs

1. Prepare Birista & Cashews:
