Preheat your air fryer to 390°F (200°C).
Pat the beef roast dry with paper towels.
Step 2 – Season the Beef
On a plate, mix salt, rosemary, thyme, and olive oil.
Roll or turn the beef roast in the mixture until fully coated.
Step 3 – Prepare the Air Fryer
If using, peel the onion and cut it in half. Place onion halves in the air fryer basket.
Place the seasoned beef roast in the basket.
Step 4 – Cook
Air fry the beef at 390°F (200°C) for 5 minutes on each side.
Then, reduce the temperature to 180°C (356°F) and continue cooking for 45–50 minutes, depending on your preferred level of doneness.
Step 5 – Rest & Serve
Remove the roast from the air fryer and let it rest for 10 minutes.
Carve thinly against the grain. Serve with roasted or steamed vegetables, wholegrain mustard, and gravy.
